400 g of levain half was Sourdough and half was my YW levain that I’m maintaining as a agency starter and simply feeding it flour and water.
It was 1400 g however didn’t fairly fill the Pullman. I used my Trinity at 25g for every element. Dough perfume was a wealthy chocolate. I used 3 laminations on a really moist counter to create a stunning elastic dough.
