Italian Sausage Hash Eggs Benedict with Parmesan Hollandaise Sauce. Garlic, onions and crispy fried potatoes along with Italian sausage, poached eggs and topped with a tacky Hollandaise sauce.

This unimaginable sausage hash was impressed by a the contents of the fridge one night when simply Partner and I have been dwelling alone for dinner. I do know many readers of Rock Recipes love breakfast for dinner too.


I am not a giant morning eater myself so my huge breakfasts are usually had as late morning weekend brunches. A huge cooked breakfast for dinner can also be a giant favorite on this home.
There was some raw Italian sausage within the fridge leftover from a spaghetti we had made the day earlier than.
Plus, I found some actually good pre-grated Parmigiano-Reggiano cheese that hadn’t been all used to prime the pasta.


I had the thought to flavour a Hollandaise sauce with the Parmesan. Partner fancied some hash browns together with her eggs so we threw all of it along with some garlic and onions in what turned out to be one extremely satisfying brunch dish.
We loved it a lot that we’re already planning to have it this weekend when the children are round for brunch.
