Aloo Matar ki Sabzi is certainly one of my most favourite North Indian type recipes that I put together usually in the course of the winter months when recent inexperienced peas are in season. Easy, comforting, heat and scrumptious with candy, spicy and tangy flavors!! This no onion no garlic recipe is a rasawala (the consistency of the curry/gravy is skinny) that makes for an ideal accompaniment with roti, puri, stuffed parathas or flavored rice like vegetable pulao or jeera rice.

Ripe tomatoes are essential so don’t make this if you happen to shouldn’t have them readily available. Make sure you blanch the tomatoes until the pores and skin wilts and the tomatoes are smooth. I like so as to add the stalks of recent coriander whereas the curry is simmering and garnish with the leaves on the time of serving. I served Aloo Matar with Gobi parathas which made for a tasty mixture.
