Swedish Tunnbrod | The Contemporary Loaf


For the flatbreads Neighborhood Bake, I made Swedish Tunnbrod.  The recipe is from King Arthur’s Large E book of Breads, giving me one other alternative to bake one thing from that e book.  

Tunnbrod is pretty simple.  This recipe known as for AP flour, rye flour (I used complete rye flour), sugar, yeast, salt, floor fennel seeds, milk, and melted butter.  I mixed the dry substances after which blended within the moist substances by hand.  The ensuing dough was kneaded by hand for a couple of minutes, then allowed to ferment for an hour.

Whereas the rounds relaxed, i preheated a griddle over medium warmth.  I rolled out the primary spherical to roughly 1/8 inch thick and docked the complete floor with a fork.  It was then positioned on the griddle.

 

After a minute, it was bubbled up and able to flip.

It seemed like this:

A minute extra was sufficient to cook dinner the second aspect.

Whereas every flatbread was on the griddle, I rolled out and docked the following one.

I am undecided how these are eaten in Sweden however we loved some for lunch with hen salad rolled up inside.  They’re very tasty, particularly with the fennel within the combine.
