Louisiana Rooster Gumbo (Gluten-Free)


Louisiana Rooster Gumbo has been a long-time household favourite. It’s filled with nourishing components and is tremendous comforting!

1/2 cup unsalted ghee (or avocado oil in the event you’re dairy-free and might’t do ghee)

Directions

Add the tomatoes, tomato paste, sea salt, cayenne, thyme, oregano and black pepper and stir for about 45 seconds till aromatic. Then add the water, hen, wine and bay leaves. Stir to mix, flip up the warmth to excessive and convey to a boil. Scale back to low and simmer for about 1 hour, and till hen is cooked by. 

Take away the hen items from the pot and when they’re cool sufficient, pull the meat off the bone, discard the pores and skin, shred and add the shredded hen again into the pot. Take away the bay leaves. Regulate seasonings to style with salt and pepper. 

Serve gumbo over rice and sprinkle with file.
